Issue 10 : Bacon Beer


Ahhh, beer. So cool and refreshing, with its delightful aroma and delectable taste, it truly is a feast for our senses. Like many among you I am passionate about beer, and as should be obvious I'm also a big fan of bacon so it was only natural that my mind would turn to the subject of bacon beer.

I'm not talking about standard bar fare here, no settling for a beer with a plate of bacon morsels. No, I'm talking straight up bacon flavored beer. It is a snack unto itself. Bacon and beer together in one brown longneck of deliciousness.

As is often the case with experimental uses of bacon, I started by frying up some bacon. After patting it dry and putting it in the fridge to cool I moved on the the important decision of the project - which beer to use? It needed to be robust enough to handle the smokiness of the bacon, yet not overwhelm the porky character of our favorite meat. In the end I decided to use a locally made witbier.

Having selected the beer I put it in the freezer. I wanted the beer to be as cold as it could be, without being frozen, for the bacon insertion process. Being colder should allow more carbonation to stay in the beer when I open it, but being frozen might break the bottle. So after a carefully calculated wait, I removed the beer from the freezer and started work.

First, I removed the original cap and tossed it. Then I took the bacon, rolled it slightly and started stuffing it into the bottle. Which is how I learned that bacon makes beer foam. A lot. Who would have expected that one?

After putting in my bacon slices, I recapped the beer using a bottle capper and put it back in the fridge to age. I figured a week would be enough for the bacon flavor to infuse the beer sufficiently.

After a week of waiting, I was eager to try the concoction, so I grabbed a pint glass and my camera and opened up the special brew. Upon pouring it was clear that I was in for a special treat. The wheat and spice notes in the nose were opened up with a hint of smoky pork, and the whiteness of the foamy head reminded me of everything I love about bacon grease.

And the taste? Oh, the taste! The refreshing and citrusy flavors in the beer were complimented wonderfully by the porkiness and milk smoke flavors in the bacon. The salt was not discernible due to being diluted, but this is one case where it was not missed.
